I have fallen in love with dark chocolate and cacao over the years! Milk chocolate seems to be a thing of the past because it just doesn't taste as good as it use to! Besides the bitter sweet taste of dark chocolate there are many health benefits involved with this superfood. One more excuse to eat sweet treats!
Cacao is packed with vitamins and antioxidants that make it a super food or natural Multi-Vitamin! The beneficial ingredients found in the Cacao nibs (raw chocolate) are Antioxidants, Theobromine, Phenylethylamine, Essential Minerals and Vitamins. Cacao also can increase the levels of serotonin your brain produces. Eating cacao can raise your natural levels of serotonin and create a balancing effect. Cacao contains abundant oleic acid, the type of fatty acid found in olive oil, which helps prevent heart disease and promote antioxidant activity. So get that dark chocolate and cacao powder in your diets immediately, but in moderation of course!!

Avocado Blueberry Brownies

You will need:
5 oz dark vegan chocolate, broken into chunks
2 ripe avocados
1 tbsp coconut oil
1 cup organic brown sugar
1.5 ripe bananas
3/4 cup almond meal mixed with 2/3 cup gluten free flour
1/2 tsp baking powder
1/3 cup raw cacao powder
1 tsp cinnamon
1 tsp vanilla extract
1 cup frozen blueberries

Preheat oven to 350 degrees, lightly oil a 20cm by 20 cm (8 inch) pan. Melt chocolate in a heat save dish over a pot of simmering water.

Mix together the flours, baking powder, cacao powder, and cinnamon. In a separate bowl mash vanilla, banana and avocado together. Once chocolate is melted stir in the sugar until dissolved.

Mix together chocolate mix and avocado mix thoroughly. Combine the wet and dry ingredients and stir well. Pour in frozen blueberries and any left over chocolate. Pour the mix in brownie pan and smooth. Baked for 30 mins,  until the top is set. Let cool for 10/15 minutes and enjoy! Serve with non-dairy ice cream.


My absolute favorite dessert is a warm brownie with dairy free ice cream. Freshly baked gooey brownies make my mouth water, so when I stumbled upon this Vegan Avocado Blueberry Brownie recipe, I knew what I was going home to make yesterday evening! Vegan doesn't have to be boring or limiting! I have never had better food then I have in the past couple years of eating mostly a plant based diet! Not only do I have more energy and feel great but I get to experiment baking yummy sweet treats that never disappoint!

I love browsing all sorts of food blogs, so when I came across
www.sugarandcinnamonblog.com I was intrigued with all of her recipes. I saw her Avocado Blueberry Brownies and I knew I had to try them! They turned out just how I wanted, gooey, full of flavor, and all around delicious.  I changed a few things for my recipe just because I like to see different variations! I also made mine vegan, because who doesn't like a mostly plant based sweet treat!? I used raw Cacao powder in mine and a vegan dark chocolate bar! It gave it a sweet but not over powering flavor!
