Well I don't know about you but I am in some serious need of dairy-free and gluten-free foods after these holidays...great I haven't even made it past New Years! Yikes! Although I am quite the buzz kill on New Years Eve, a homebody who wants to be in pjs with some lobster and rich vegetables is where I'm at. Who am I kidding that is the real way to ring in a New Year. I really hope everyone had a great holiday with family and friends. My Christmas was filled with family, relaxing and some serious heavy dinner, did I mention I actually had some top sirlon...I regret nothing. I was super excited to open the present that contained my new Practical Paleo book! I flipped through it the other night and found some great, easy recipes.

I always run out of breakfast ideas after so long, I mean everyone likes smoothies done 20 different ways just as much as the next guy but its nice to switch it up! I came across a grain-free porridge, stop..wait, grain-free? But how? Shredded coconut! Who would have thought! Coco-nutty Porridge is bomb. Mixed with your favorite nut butter and topped with your favorite fruit, can't beat that. I love this because it is so simple and we all know I love my simple recipes. I do enjoy original oatmeal because I am not fully gluten free, but I cross the line on eating it every morning since I don't live in a gym. I love grains but sometimes my belly is lighter throughout the day without it.






























It takes 6 simple ingredients to make this porridge, talk about simple!

Ingredients

2 tbsp cashew, almond, or peanut butter
1/4 cup shredded coconut
6 tbsp coconut milk (full-fat)
1/4 tsp vanilla extract
1/2 tsp cinnamon
1 tsp honey or maple syrup


Directions

Combine all ingredients in a small mixing bowl. Transfer to a sauce pan, and heat over low heat until it reachs your desire temperature. Top with banana, apple, raspberries or nuts and Enjoy!
